Summer is officially here and we are embracing every aspect of it here at Superior Fresh! We've got just the recipe to embrace the beautiful colors and fruits of the season. Red leaf lettuce fresh from the greenhouse is the star of the show in our summer salad. We've paired it with garden fresh strawberries, tangy Wisconsin blue cheese, and farmers market radishes and red onions. Super sweet strawberries mixed with balsamic vinegar and rich olive oil are the perfect combination to top of the fresh ingredients. Sprinkle on some toasted pecans and you have the perfect summer lunch. Great on its own but add a filet of grilled salmon for a drool worthy main course that will have everyone coming home early and bellying up to the table. Enjoy!
Strawberry Vinaigrette In a blender combine:
1 cup fresh strawberries, roughly cut
¼ cup balsamic vinegar
¼ cup extra-virgin olive oil
1 Tablespoon stone ground mustard
1 clove garlic, minced
1 Tablespoon of strawberry preserves
¼ tsp of salt and pepper
Blend until completely combined, jar, and refrigerate immediately. Good for 7-10 days.
