Herb Crusted Salmon with Garden Veggies

Ingredients

  • 1 fillet Superior Fresh Atlantic salmon

  • Assorted garden veggies

    • We used green beans, red onions, summer squash, zucchini, and cherry tomatoes

Herb Mixture

  • 6 cloves garlic, chopped

  • Parsley, chopped

  • Thyme, chopped

  • Oregano, chopped

  • Basil, chopped

  • Rosemary, chopped

  • Olive oil

  • Salt

  • Pepper


Instructions

  1. Preheat oven to 400 degrees.

  2. Make herb mixture by combining all chopped herbs and lightly coating with olive oil. Mix together by hand and season with salt and pepper.

  3. Assemble salmon and veggies on baking sheet.

  4. Top salmon with herb mixture and lightly toss with olive oil, salt, and pepper.

  5. Bake for approximately 15-20 minutes, until salmon starts to flake.
