Layered Corn Salad with Avocado Crema


  • 1 container Superior Fresh Spring Mix

  • 1 package grape tomatoes, sliced in half

  • 1 cup corn, either canned or frozen

  • 1/2 cup feta cheese

Avocado Crema

  • 1 avocado or 1 cup guacamole

    • We used store bought guacamole to keep it simple and quick

  • 1/2 cup sour cream

  • Handful of fresh cilantro

  • Juice from 1 lime

  • 1/4 cup olive oil

  • 1/4 cup vinegar

  • Salt & pepper


  1. Put all avocado crema ingredients into blender and blend until smooth. Add additional olive oil for thinner consistency, if desired.

  2. Layer salad into bowl or glass starting with corn on the bottom - followed by tomatoes, baby spring mix, and feta cheese.

  3. Top salad with avocado crema and enjoy!
