Pomegranate Orange Salad


  • 1 container Superior Fresh lettuce

  • 2 cans (15 oz. each) mandarin oranges

  • 3/4 cup pomegranate arils

  • 1/2 cup crumbled feta cheese

  • 1 cup sliced almonds

  • 1/4 cup white sugar


  • Juice from 1 large orange

  • 1 tsp. orange zest

  • 2 tbsp. white wine vinegar

  • 1 tbsp. honey

  • 1/4 cup olive oil

  • Pinch of salt

  • Pinch of ground pepper


  1. Drain the mandarin oranges.

  2. Mix together the lettuce, oranges, and pomegranate arils.

  3. In a large skillet over medium-high heat, add the sliced almonds and white sugar. Stir constantly for 3-5 minutes until the sugar melts over the almonds. Pour the candied almonds onto tin foil and let harden.

  4. In a blender, blend all dressing ingredients together.

If eating the salad immediately: mix all ingredients together and top with candied almonds and feta cheese

If saving for later: keep ingredients separate and combine right before serving
