Pomegranate Orange Salad
1 container Superior Fresh lettuce
2 cans (15 oz. each) mandarin oranges
3/4 cup pomegranate arils
1/2 cup crumbled feta cheese
1 cup sliced almonds
1/4 cup white sugar
Juice from 1 large orange
1 tsp. orange zest
2 tbsp. white wine vinegar
1 tbsp. honey
1/4 cup olive oil
Pinch of salt
Pinch of ground pepper
Drain the mandarin oranges.
Mix together the lettuce, oranges, and pomegranate arils.
In a large skillet over medium-high heat, add the sliced almonds and white sugar. Stir constantly for 3-5 minutes until the sugar melts over the almonds. Pour the candied almonds onto tin foil and let harden.
In a blender, blend all dressing ingredients together.
If eating the salad immediately: mix all ingredients together and top with candied almonds and feta cheese
If saving for later: keep ingredients separate and combine right before serving
