Salmon Caesar Salad
1 fillet Superior Fresh Atlantic salmon
1 container Superior Fresh green romaine or Baby Romaine Blend
1/2 loaf cubed sourdough bread
1 tsp. garlic powder
Juice from 1 lemon
1/2 cup cooked and crumbled bacon
2 eggs, poached
1 avocado, sliced
1/2 cup grated parmesan
We used Newman’s Own Creamy Caesar
Preheat oven to 450 degrees. Place the cubed bread onto baking sheet. Drizzle with olive oil and bake until crispy.
Rub the fillets with garlic powder and salt. Bake the salmon until it starts to flake. Remove from oven and squeeze the lemon juice over the fillets.
Assemble the salad by combining the lettuce, bacon, parmesan cheese, and Caesar dressing. Top with avocado slices, croutons, salmon fillet, and poached egg. Just before serving, break the egg for a picture perfect meal.
