Spinach Gratin


  • 3 lbs. Superior Fresh Baby Spinach, frozen and chopped

  • 4 tbsp. butter

  • 1 chopped yellow onion

  • 1/4 cup flower

  • 1/4 tsp. nutmeg, grated

  • 1 cup heavy cream

  • 2 cups milk

  • 1 cup parmesan cheese, grated

  • 1/2 cup Gruyere cheese, grated

  • 1 tbsp. salt

  • 1/2 tsp. black pepper


  1. Preheat oven to 425.

  2. In a sauté pan, melt butter over medium heat. Add onions and cook until translucent. Add flour and nutmeg, cook for additional couple of minutes. Add the cream and milk, cook until thickened.

  3. Squeeze as much liquid as possible from the spinach, and then add to the sauce. Add 1/2 cup parmesan cheese and mix well. Season with salt and pepper to taste.

  4. Transfer the spinach to individual ramekins, and sprinkle with remaining parmesan cheese and Gruyere.

  5. Bake for about 20 minutes, until hot and bubbly.
