Steak & Avocado Salad

Ingredients

  • 1 lb. steak of your choice

  • 1 tbsp. olive oil

  • Salt & pepper

  • 1 container Superior Fresh Spring Mix

  • 1/4 red onion, sliced

  • 1/2 lb. asparagus

  • 1 cup cherry tomatoes, sliced

  • 1 avocado, sliced

Chimichurri Dressing

  • 1 garlic clove

  • 1 cup fresh cilantro

  • 2 tbsp. red wine vinegar

  • 1 tbsp. lime juice

  • 3 tbsp. olive oil

  • 1/4 tsp. smoked paprika

  • 1/2 tsp. red pepper flakes

  • Salt & pepper


Instructions

  1. Grill the steak and asparagus to your desired doneness. Let the steak rest prior to thinly slicing.

  2. Add the dressing ingredients to a blender or food processor and blend until smooth, adding more olive oil if desired.

  3. Layer the spring mix, steak, asparagus, red onion, cherry tomatoes, and avocado on a large serving platter.

  4. Top with chimichurri dressing and enjoy!
