Salmon Sandwich with Pesto Avocado Spread
1 salmon fillet, cut into serving portions
Whole grain bread
1 tbsp. olive oil
1 large tomato, sliced
Handful Superior Fresh arugula
Pesto & Avocado Spread
1 cup basil leaves
1 clove garlic
1 tbsp grated parmesan
1/4 cup olive oil
1/2 avocado (or 1/4 cup guacamole)
Cut your salmon fillet into serving portions, leaving the skin on.
Season the fillets with salt and pepper and place a few sprigs of basil, parsley, and thyme directly on top of your fillets.
Cook the salmon using your method of choice. Popular choices include grilling or baking. We baked ours at 400 degrees for about 15 minutes, until the salmon starts to flake apart. Once cooked, remove the skin and discard.
Place all of the pesto avocado spread ingredients in a small blender and blend until smooth.
Toast your bread. If you are grilling your salmon, you could brush each slice with olive oil and grill for a few minutes on each side.
Assemble your sandwich by spreading the pesto avocado mixture on both slices of bread, then layer with fish, tomato, arugula, and drizzle with fresh lemon juice.
