Chicken Caprese Salad


  • 1 container Superior Crunch lettuce

  • 4 boneless, skinless chicken breasts

  • 1 avocado, sliced

  • 1 cup grape tomatoes, halved

  • 1 cup mozzarella balls

  • 1/4 cup basil leaves, chopped


  • 1/4 cup balsamic vinegar

  • 2 tbsp. olive oil

  • 2 tsp. brown sugar

  • 1 tsp. garlic, minced

  • 1/4 cup basil leaves, chopped

  • 1 tsp. salt


  1. Mix together all marinade ingredients, place chicken breasts in bowl, and pour marinade over the chicken breasts.

  2. Heat oil in large skillet over medium-high heat and cook chicken breasts until done, about 10 minutes. Remove chicken from heat and let sit before slicing.

  3. Prepare large serving bowl by placing Superior Crunch on the bottom and adding the sliced avocados, tomatoes, and mozzarella on top. Slice the chicken breasts and add to the salad. Garnish with chopped basil and reserved marinade or store-bought balsamic glaze.
