Bacon Wrapped Salmon with Roasted Brussels Sprouts


  • 1 Superior Fresh Atlantic Salmon fillet, skinned and cut into portions (or 4 individual pre-cut portions)

  • 1 lb. of applewood smoked bacon (4 slices for wrapping, the rest cut into small pieces)

  • 2 lbs. brussels sprouts, quartered

  • 1 Granny Smith apple, cubed

  • 2 tsp. red wine vinegar

  • 1/4 cup parmesan cheese, shredded


  1. Preheat oven to 425 degrees and cover a large baking sheet with foil.

  2. Place Brussels sprouts and bacon on the baking sheet and cook for about 10-15 minutes.

  3. While Brussels sprouts and bacon are cooking, wrap each portion of salmon with one strip of bacon.

  4. Remove Brussels sprouts from oven and place bacon-wrapped salmon in the center of the pan. Add chopped apples to the Brussels sprouts and return to oven, baking for an additional 15-20 minutes. Remove from oven once the bacon-wrapped salmon has reached your desired done-ness.

  5. Toss Brussels sprouts with red wine vinegar and parmesan cheese.

  6. Put Brussels sprouts in a large serving dish and place bacon-wrapped salmon on top. Serve immediately.
