Blackberry & Blueberry Glazed Salmon
1 Superior Fresh Atlantic salmon fillet
1 container of blackberries
1 container of blueberries
2 tbsp. red wine
2 tbsp. balsamic vinegar
1 clove garlic, minced
1 lemon, juice only
Salt & pepper to taste
1/4 cup basil leaves, sliced
Preheat oven to 425 degrees.
In a small saucepan, combine blackberries, blueberries, red wine, balsamic vinegar, and garlic. Heat over medium-low heat and simmer until the berries start to breakdown and create a thick sauce.
Remove sauce from heat and strain to remove seeds.
Season fillet with salt, pepper, and lemon juice. Pour sauce over fillet, cover with foil, and bake for 15-20 minutes.
When the fish starts to flake, remove from oven and serve.
