Blackberry & Blueberry Glazed Salmon


  • 1 Superior Fresh Atlantic salmon fillet

  • 1 container of blackberries

  • 1 container of blueberries

  • 2 tbsp. red wine

  • 2 tbsp. balsamic vinegar

  • 1 clove garlic, minced

  • 1 lemon, juice only

  • Salt & pepper to taste

  • 1/4 cup basil leaves, sliced


  1. Preheat oven to 425 degrees.

  2. In a small saucepan, combine blackberries, blueberries, red wine, balsamic vinegar, and garlic. Heat over medium-low heat and simmer until the berries start to breakdown and create a thick sauce.

  3. Remove sauce from heat and strain to remove seeds.

  4. Season fillet with salt, pepper, and lemon juice. Pour sauce over fillet, cover with foil, and bake for 15-20 minutes.

  5. When the fish starts to flake, remove from oven and serve.
