Arugula & Sirloin Steak Salad

Ingredients

  • 2 cups Superior Fresh Baby Arugula

  • 2 cups Superior Fresh Power Blend

  • 1 lb. sirloin steak

  • 1 tbsp. olive oil

  • Salt & pepper for steak seasoning

  • 2 tbsp. butter

  • 1/4 cup brown sugar

  • 2 pears, cored and sliced

  • 1 tbsp. sugar

  • 3/4 cup chopped pecans

  • 1/2 cup blue cheese crumbles

  • 1 scallion, sliced

  • Red pepper flakes, to taste

MUSTARD VINAIGRETTE

  • 1 tbsp. dijon mustard

  • 3 tbsp. red wine vinegar

  • 1/2 tsp. sugar

  • 1/3 cup olive oil

  • Salt & pepper to taste


Instructions

  1. Season steak with olive oil, salt, and pepper.

  2. Cook your steak using your method of choice. Great options include pan seared, grilled, or sous vide.

  3. Once meat is done cooking, let it rest on a cutting board for at least 10 minutes before slicing.

  4. Heat butter in large pan over medium heat. Add brown sugar and cook until dissolved. Add pear slices and cook until soft, about 5-8 minutes. Transfer pears out of pan, leaving behind as much sauce as possible.

  5. Add pecans to the same pan and cook for 1-2 minutes until pecans are coated in sauce. Remove from heat.

  6. Whisk all vinaigrette ingredients together and set aside for serving.

  7. Slice steak against the grain, about 1/2” in thickness.

  8. Prepare salad on a large serving platter - starting with your mixed greens. Top with steak strips, caramelized pears and pecans, blue cheese, and scallions. Season salad with additional salt and pepper, and also red pepper flakes to taste.
