Citrus Salmon & Salad feat. 'Citrus Splash'

Ingredients

SALMON

  • 4 portions of Superior Fresh Atlantic Salmon (approximately 6oz each)

  • 2 tbsp. olive oil

  • 1 tbsp. dried dill

  • 1 tsp. dried lemon peel

  • Salt & pepper to taste

  • 4 cedar planks, soaked in water

SALAD

  • 1 container Superior Fresh Citrus Splash salad greens

  • 1/4 cup grated parmesan cheese

  • 1/4 cup parmesan crisps, crushed

  • Cracked black pepper to taste

  • Lemon zest to taste

LEMON DILL VINAIGRETTE

  • 1.5 tbsp. fresh lemon juice

  • 1.5 tbsp. dijon mustard

  • 1/2 tsp. honey

  • 1 clove garlic, minced

  • 1/4 cup olive oil

  • 1 tsp. dried dill (or 1 tbsp. fresh dill, chopped)

  • Salt & pepper to taste


Instructions

  1. Soak your cedar planks in water for at least two hours, or overnight if possible.

  2. Set your grill to medium-high heat. Alternatively, preheat your oven to 400 degrees and forego the cedar planks.

  3. Place 1 portion of salmon on each cedar plank. Drizzle with olive oil and season with dill, salt, and pepper.

  4. Place cedar planks on the grill and cook for about 15 minutes. If you’re baking, cook for about 20 minutes. Once your salmon starts to flake remove from heat.

  5. While the salmon is cooking, combine all of the vinaigrette ingredients in a mason jar and shake to combine.

  6. To assemble the salad, divide the Citrus Splash onto 4 dinner plates and top with parmesan cheese and crushed parmesan crisps. Drizzle lemon dill vinaigrette over the salad and sprinkle with fresh lemon zest and freshly cracked black pepper.

  7. Place salmon on top of salad, serve, and enjoy!
