Honey Mustard Salmon BLT

Ingredients

  • 3 oz Superior Fresh Salmon Portions, qty. 4

  • 1 tbsp. cajun seasoning

  • 1 tsp. sea salt

  • 2 tbsp. canola oil

  • 6 oz (1 bag) Superior Fresh ‘Better Butter Blend’ Organic Chopped Greens or 1 container of Superior Fresh Living Butter Lettuce

  • 8 slices thick cut bacon, cooked

  • 8 slices thick cut sourdough or crusty bread, buttered and toasted

  • 2 vine-ripe tomatoes, sliced

DRESSING

  • 1/4 cup dijon

  • 4 tbsp. honey

  • 1/4 cup apple cider vinegar

  • 1/4 cup extra virgin olive oil

  • 1 tbsp. lemon juice

  • 2 tbsp. capers

  • 2 sprigs fresh thyme

  • 1/4 tsp. ground black pepper


Preparation

  1. Season salmon with salt and cajun seasoning.

  2. Heat a cast iron skillet and sear salmon in oil for 3-4 minutes per side.

  3. Combine all dressing ingredients in a mason jar and shake well.

  4. Mix butter lettuce in a bowl with a 1/4 to 1/3 cup of dressing.

  5. Place mixed lettuce on 4 pieces of bread followed by salmon fillet, 2-3 tomato slices, bacon, and top off with additional lettuce.

  6. Place second slice of bread on top, cut sandwich in half, and serve!
