Orange & Mint Fall Salad with Pumpkin Maple Vinaigrette

Ingredients

  • 1 container Superior Fresh Mighty Mix (or other salad blend)

  • 2 tbsp. fresh mint, chopped

  • 4 small clementines, peeled and wedged

  • 1 cup red grapes, quartered

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup chickpeas, rinsed and drained

  • 1/3 cup pomegranate seeds

  • 1/4 cup roasted & salted pistachios, roughly chopped

PUMPKIN MAPLE VINAIGRETTE

  • 1/4 cup canned pumpkin (not pumpkin pie filling)

  • 1/4 cup apple cider vinegar

  • 2-3 tbsp. maple syrup (we like ours a little on the sweeter side)

  • 1 tsp. Dijon mustard

  • 1 tsp. garlic, minced

  • 1/2 cup olive oil

  • Pepper, to taste

  • 3 sprigs of thyme leaves, chopped


Instructions

  1. Combine all vinaigrette ingredients into a mason jar and shake well to combine. For a thinner consistency, add water 1 tbsp. at a time.

  2. Place salad greens in a shallow serving bowl.

  3. Layer all toppings over the salad greens, ending with the chopped mint and pistachios.

  4. Drizzle vinaigrette over salad and serve immediately.
