Blackened Salmon Caesar Salad

Ingredients

  • 4oz Superior Fresh Atlantic salmon fillet, skinned, qty. 2

  • 2 tbsp. canola oil

  • 6oz Superior Fresh ‘Refreshing Romaine Blend’ Organic Chopped Salad

  • 1/2 cup Caesar dressing

  • 2 tbsp. cajun or blackening seasoning

  • 1 cup croutons

  • 1/2 cup parmesan cheese, shaved

DRESSING

  • 3 egg yolks

  • 2-3 tbsp. anchovy, finely chopped

  • 1/2 - 3/4 cup extra virgin olive oil

  • 1 garlic clove, grated

  • 2 tbsp. fresh lemon juice

  • 2 tsp. cracked pepper

  • Dash of Worcestershire


Preparation

DRESSING

  1. Beat eggs, anchovy, and garlic in a glass bowl. Add pepper, Worcestershire, and lemon juice.

  2. Continue to beat while slowly drizzling olive oil until well combined.

  3. Add salt and pepper to taste.

SALMON & SALAD

  1. Season salmon fillets and heat canola oil in a cast iron skillet.

  2. Sear salmon for 4 minutes, flip, and cook additional 2 minutes or until flesh is just translucent.

  3. In a mixing bowl, toss salad with dressing and croutons until coated.

  4. Plate salad and salmon and garnish with shaved parmesan.
