Grilled Salmon with Superior Selections Salad

Ingredients

  • 6oz Superior Fresh Atlantic salmon fillet, qty. 4

  • 2 tbsp. canola oil

  • Kosher salt and black pepper

  • 6 oz Superior Fresh ‘Superior Selections ’ Organic Chopped Salad

  • 1 cup cherry tomatoes, halved

  • 1 red onion, thinly sliced

  • 1/2 cup banana peppers, sliced

  • 1 package fresh mozzarella pearls

DRESSING [makes 1 cup]

  • 1/4 cup balsamic vinegar

  • 1/4 cup extra virgin olive oil

  • 1 tbsp. lemon juice, freshly squeezed

  • 2 sprigs fresh oregano

  • 1/4 tsp. ground black pepper


Preparation

  1. Season salmon generously with salt and pepper.

  2. Add the salmon fillets to the pan with the oil. Let the fish cook in the oil for 7-8 minutes, turning halfway through. Remove from the oil with a fish spatula to a plate before serving.

  3. Toss greens with dressing. Plate and garnish with tomatoes, cucumbers, and red onion.

  4. Top off salad with salmon fillet and serve.
