Moroccan Salmon Meatballs with Mint Yogurt Sauce

Ingredients

Meatball
  • 1 container either Superior Fresh Living Butter Lettuce or Citrus Splash
  • 1 lb. Superior Fresh Salmon Burgers (4 patties)
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1 small onion, grated with juice
  • 2 garlic cloves, minced
  • 1/4 cup cilantro, chopped leaves and stems
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Mint Yogurt Sauce
  • 1 cup plain non-fat Greek yogurt
  • 1 garlic clove, minced
  • 2 tbsp fresh mint, chopped
  • 2 tbsp lemon juice
  • Salt & pepper to taste

Instructions

  1. Combine all meatball ingredients and mix until incorporated.
  2. Portion and roll 1.5 oz of salmon mixture and set aside. Recipe should make roughly 18-20 meatballs.
  3. Combine all ingredients for yogurt mint sauce.
  4. Using a cast iron skillet, heat about ¼ cup of oil. Add meatballs and cook until golden brown while turning to evenly cook (10-12 minutes or 145 internal temperature).
  5. Serve with mint yogurt sauce and chopped butter lettuce or Citrus Splash salad blend.
