Salmon Cobb Salad

Ingredients

  • 4 oz Superior Fresh Atlantic salmon fillet, skinned, qty. 2

  • 6 oz Superior Fresh “Better Butter Blend” Organic Chopped Salad

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • 6 oz bacon, cooked and crumbled

  • 4 hard boiled eggs, sliced

  • 1/2 tsp. salt

  • 1/2 tsp. pepper

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • 2 tbsp. canola oil

HONEY MUSTARD DRESSING

  • 1/4 cup dijon mustard

  • 4 tbsp. honey

  • 1/4 cup apple cider vinegar

  • 1/4 cup extra virgin olive oil

  • 1 tbsp. lemon juice

  • 2 tbsp. capers

  • 2 sprigs fresh thyme

  • 1/4 tsp. black pepper


Preparation

  1. Mix all dressing ingredients until fully blended, makes about 1 cup.

  2. Cook bacon at 400 degrees for 15 minutes or until done to desired crispiness.

  3. Season salmon fillets with salt, pepper, garlic powder, and onion powder and heat canola oil in a cast iron skillet.

  4. Sear salmon fillets for 4 minutes, flip, and cook additional 2 minutes or until flesh is just translucent.

  5. Plate salad greens and layer on toppings. Top with salmon fillet and honey mustard dressing.
